This Week for Dinner: Fuss Free Recipes That I am Making! | The Milton Moms

I love to cook. LOVE to try new recipes, but really struggle to find the time, OR find proper meals that will truly please everyone in my house. And while I like being in the kitchen, meal planning has become such a DAUNTING task. I stare at my phone for what feels like hours and often come up empty handed and in a full panic. Yet, I continue to do it because it helps me feel more prepared for any chaos that comes my way during the week. Please tell me I am not alone in feeling this way?! I figured it would be fun to share what I am cooking up at home, in the hopes that it might help some of you too!

I am also making it a goal to sneak more veggies into my kids food. I am so sick of doctors always asking my kids if they eat their broccoli. Of course they don’t!!! But maybe them will if I can trick them. Wishful thinking….

Here are some yummy meals I am making this week from recipes around the web.

 

SUNDAY

Grilled steak & veggies– Just add some olive oil, salt and pepper and we are good to go. I had my two year old “help” me prepare the veggies and was shocked to see that she wanted to try every single one. Maybe there is a method to this madness.

 

MONDAY

Egg roll in a bowl. This one is full of veggies and great flavor! You can serve it over rice, or fry an egg on top. So yummy! It makes tons so you can have leftovers for lunches.

 

TUESDAY

Roasted Bone In Chicken with Green Beans. My kids LOVE a roast chicken and I have been buying breasts because they cook up so quickly in the oven. I used this recipe because it makes the skin extra crispy. I am sure there will be a demand for mac & cheese as well. Boxed of course.

 

WEDNESDAY

Copy Cat Harvest Bowl Salads from Sweet Green. I try to get enough Chicken so that we have plenty of leftovers from Tuesday’s dinner. If you haven’t tried the Harvest Bowl at Sweet Green, you are missing out! I roast up some butternut squash and make some rice and throw it all together with arugula or kale, diced apples and maybe some cheese. I separate these items out into individual muffin cups for the kids to make it less scary.

 

THURSDAY

Cauliflower Gnocchi with chicken sausage & vegetables. Kate has my tried and true recipe for cooking Cauliflower Gnocchi. And I love her recipe because it is SO adaptable to whatever you have on hand!

 

FRIDAY

By Friday, I have given up 🙂

 

Additional snacks & treats!

Yummy Toddler Monster Muffins. My kids have literally NO CLUE these are full of spinach. Just add a couple of chocolate chips and they are happy. HUGE BONUS because you don’t even need a bowl to make these. Just a blender! I make these mini size- Bake at 400 degrees for about 10 minutes

 

Kristin Cavallari’s Zucchini Blondies. Again with the chocolate chips. Do you sense a theme in our house?
