Chicken Caprese….On the GRILL! | The Milton Moms

The sun is shining, the birds are chirping, the temps are warming up (sort of?), and it is finally time to fire up the grill! With Spring weather forecasted this weekend, I thought I would share one of my very favorite dinners to throw on the grill. It is perfect for warmer weather, healthy and SO EASY! Recipe is from add a pinch and it is clearly my favorite because of her GENIUS balsamic reduction. YUMMMMM. It is so good that you will want to make a lot and eat for lunch the next day!

 

 

Ingredients:

1- 1.5 lbs boneless, skinless chicken breasts

8 oz fresh mozzarella, more if you like it super cheesy

6 slices of ripe tomato

ground pepper, sea salt, fresh basil for garnish

 

For the Balsamic Reduction:

1/4 cup balsamic vinegar

1 tblspn butter

 

 

 

Directions:

Season chicken with salt and pepper, prepare chicken breasts on grill. While chicken is cooking, prepare balsamic reduction. Heat balsamic vinegar in a saucepan over low- medium heat and reduce by half. Add butter and whisk to combine. Set aside. Place cooked chicken on a platter, and top each piece with plenty of mozzarella cheese & tomatoes, Season with more salt & pepper to taste. Add basil. Top with balsamic reduction & serve!

I love to make this with a little arugula or kale salad. Toss with some shaved part, lemon, evoo, ground pepper and freshly made croutons and call it a night! Crusty bread or some parmesan couscous or quinoa would also be delicious! Don’t forget to serve with a generous serving of wine for mom!
