Cinnamon + Sugar + Apples= YUM! | The Milton Moms

Healthy snickerdoodle muffins that are perfect for the lunchbox or an after school snack? Yes please! Mini muffins are always a big hit in our house. I like them because the cooking time is short AND they are the perfect size for little hands. We make a LOT of muffins and I don’t mind because its an easy way to get my kids to gobble up some extra fruit and veggies! This recipe is perfect for Fall and calls for applesauce….so easy! You could even use your own applesauce made from those freshly picked apples.

 

Preheat oven to 375 degrees and grease your mini muffin pan. I used coconut spray from Trader Joes. I use their spray for EVERYTHING. I have even used it to get my sons leg unstuck from our porch couch. No joke.

 

Ingredients:

1 c applesauce (we used apple cinnamon!)

2 tbsp of melted butter (slightly cooled)

1/2c milk

1 tsp milk

1c flour

1/2c whole wheat flour

2 tsp baking powder

2 tsp cinnamon

1/2c of sugar

1/4 tsp of salt

LOTS of cinnamon & sugar for sprinkling 🙂

 

Stir together applesauce, butter, milk, egg and vanilla. Add in all of your dry ingredients and gently fold together. Fill muffin cups in muffin tin and generously sprinkle the top of each muffin with cinnamon & sugar. Bake for 10-12 min. The muffins should come out with a crusty and delicious top, and are so yummy served warm!
