Strawberry Summer Cake | The Milton Moms

 

This is one of my FAVORITE summer recipes for so many reasons. It is simple to put together, uses the best of summer berries, is light and delicious, yet looks so elegant and impressive. I bring it to every BBQ or Summer get-together, but it is also perfect for eating with the kids after a great dinner on the grill.

 

 

INGREDIENTS

  • 6 tablespoons butter at room temp
  • 1 1/2 cups of flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon of salt
  • 1 cup, plus 2 tablespoons of granulated sugar
  • 1 egg
  • 1/2 cup of milk
  • 1 teaspoon of vanilla extract
  • 1 pound of fresh strawberries, hulled and sliced

 

 

DIRECTIONS

Preheat oven to 350 degrees

 

For this recipe you need a 10″ pie dish (deep dish, something like this would be great) OR a 9 or 10″ cake pan. Make sure you butter the inside of the pan well.

 

Wish dry ingredients together in a small bowl. Use a mixer to combine butter, and sugar. Beat until light and fluffy and well combined. Add egg, and vanilla and mix. Add dry ingredients a little bit at a time, and mix until batter is smooth.

 

Pour batter into prepared dish. Lay strawberries cut side down across the entire cake in a single layer. It’s ok if they are squished together really close! Sprinkle 2 tablespoons of sugar evenly over the top of cake. Don’t forget this step! This is what makes the strawberries extra jammy and delicious.

 

Bake cake for 10 min. Reduce oven temp to 325 degrees and bake for an additional 50-60 minutes or until center of cake is set and a tester comes out dry. Let cool on a drying rack.

 

To serve, slice and top with homemade whipped cream for some extra yumminess 🙂
