The Little Big Spoon’s Summer Strawberry Cold Orzo Salad | The Milton Moms

 

Milton mama, Bree, of The Little Big Spoon, shares her uber healthy pasta salad made with Banza! Have you tried Banza yet? It’s pasta made with chickpeas. Gluten free ANNNND grain free! So good, you can even sneak it by the kids (and the husband). This is the perfect salad to bring to a bbq and especially good for the 4th of July!

 

 

Makes two appetizer servings. Double the recipe for sharing/party portion

 

You’ll need …

  • 1/2 c Banza rice

  • 1/4 tsp lemon zest ( equal to 1 lemon)

  • 2 tsp lemon (equal to 1 lemon)

  • 1 Tbsp EVOO (my favorite here)

  • 1/2 c strawberries chopped

  • 1/2 tsp honey

  • 1/2 c packed spinach, then chop

  • 1/4 c cubed feta

  • 5 grape tomatoes, chopped

  • Mint for garnish

  • scallions, chopped for garnish

 

What to do…

  1. Follow Banza pack for rice instructions. 1/2 c of dried rice is enough for two to share as an app or for one as a meal. Set aside into a medium bowl and cool while you prepare other ingredients.

  2. Add lemon zest, juice and olive oil into bowl with rice. Gently mix and fluff with fork.

  3. Chop the strawberries and drizzle honey over the top and gently mix.

  4. Chop the spinach, feta and tomatoes and place in small size bowl and add the strawberries.

  5. Add mixture of small bowl to the medium size bowl. Gently mix with a fork.

  6. Add garnish if desired.
